nanner bread

okay yes, it’s 2:30am.
aaand yes, my banana bread came out of the oven around 1.
i know. i’m a creature of the night.
[i’m kind of a creature of everything except, like, the hours of 5-9am. bleh, nono nonono.]
lately i’ve discovered a fondness for late night baking.
and banana bread is definitely one of my most favorite things to have around. comfort food major.

so, tonight i thought i’d have some ready for mr. prince charming steven the business man’s early thursday morning breakfast!

i know there are like, a fafillion different b-nanner bread recipes out there in the world..
but the one i use time and time again is from a wonderful cookbook that a very wise woman once gave me [my mom, of course]… the joy of cooking.

ohhh, i love it. goes like this:

ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2/3 cup sugar
  • 1/3 cup veg shortening or 3/4 stick of butter
  • 3/4 tsp grated lemon zest [or lemon juice if you’re not into the whole grating thing]
  • 1 to 2 large eggs, beaten
  • 2 to 3 mashed bananas

directions

  1. preheat oven to 350 degrees & grease loaf pan
  2. whisk flour, baking powder, salt
  3. beat in a large bowl sugar, shortening/butter, lemon
  4. beat in eggs & bananas
  5. add in dry ingredients in 3 parts
  6. pour into pan & bake 1 hour
so mine came out successfully tonight, despite the fact that i accidentally used a whole stick of butter, combined all the ingredients in one bowl, and forgot to beat the eggs. but see, these are the kind of recipes i need in my life… fool-proof!

    That picture has inspired me to give it another shot… I can usually bake with the best of them, but bananner bread is the one thing that always seems to elude me!

    New follower! Have seen you before but the pic of your dog & cat & lip gloss on a toilet is what clinched it! 😉
