yummy pumpkin muffins

fall is fun and so cozy, and half the reason, i think,
is because it’s a good excuse to bake and make everything pumpkiny.
so, when i found this super tempting recipe for pumpkin muffins on smitten kitchen,
i had to bake some up and try them asap.

[little helper made sure to keep an eye on them for me.]



aaaand yay! they’re so delish.
soft and sweet and perfectly pumpkiny.
steven gave them a thumbs up, too.
here’s the recipe:

ingeredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup canned solid-pack pumpkin
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon pumpkin-pie spice
  • 1 1/4 cups plus 1 tablespoon sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

directions

  1. preheat oven to 350°F. grease or put liners in muffin cups.
  2. mix pumpkin, oil, eggs, pumpkin pie spice, 1 1/4 cups sugar, baking soda, and salt in a large bowl until smooth, then stir in flour and baking soda.
  3. mix cinnamon and 1 tablespoon sugar in a small bowl.
  4. pour batter in muffin cups [each should be about 3/4ths full], then sprinkle tops with cinnamon-sugar mixture.
  5. bake 20 to 30 minutes, until toothpick inserted into center comes out clean.
  6. let muffins cool in pan.
  7. nibble nibble! autumny goodness.
