in my kitchen baking egg-free chocolate chip cookies! [because i have a major cookie problem.]

hello, my name is brittany, and i have an addiction. i’ve had a cookie addiction for, let’s see, 26 years. i am 0 years sober of cookies, and i fully intend to keep it that way! [ahem. swallows bite of chocolate chip cookie for breakfast.]

so, i made two batches of chocolate chip cookies this weekend! took ’em to our monthly friend dinner club. took ’em to my family. took ’em to the neighbors. then, yesterday afternoon,  i made some more! because that’s the kinda gal i am. a cookieholic. seriously, i could pretty much live without most desserts, eating the healthiest of everything and be happy, but cookies are always my weakness and my exception to all rules! i also am a gal who likes to eat the dough while baking, regardless of the salmonella risks. [fyi, for the first time ever, i had salmonella poisoning a few weeks ago! but not from raw eggs. i don’t actually know what it was from! moving on…] but guess what! these cookies are egg-free! in case you wanna eat the dough slash don’t have eggs in your fridgey. [although they might not be in your fridge ever unless you live in america. i know, okay, we are over the top with our refrigeration.]

anyway, hey! want some cookies? i will share! allow me to lure you into my kitchen 😉

[this recipe is adapted from my joy of cooking cookbook, but this is how i do them!]

ingredients
  • 1 stick or 1/2 cup unsalted butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/3 cup applesauce
  • 1/4 teaspoon salt
  • 3 teaspoons vanilla
  • 1 cup plus 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking soda
  • tons of chocolate chips! [nestle tollhouse dark chocolate morsels are our FAV.]
directions
  1. preheat oven to 375°F
  2. soften butter a bit in a large bowl in the microwave
  3. add in sugar & brown sugar and mix until combined [i just mix with a fork!]
  4. mixing after each ingredient, add in applesauce, salt, vanilla
  5. mix mix mix then add the flour and baking soda! and mix mix mix some more.
  6. add in a lot of chocolate chips! or as much as you want, really. i didn’t measure.
  7. on a greased cookie sheet, plop big ole teaspoons full of dough about 2 inches apart!
  8. bake 8-10 minutes. i bake exactly 10 minutes, but my oven is convection and seems to take longer! cookies will be golden a bit on the outside but still really really really soft in the middle, which is totally how they should be!
  9. oh and lick the bowl clean while the cookies are baking! get every last smidge!

aaaand ta-daaaa! eat up!!

    Oh, yum. I'm right there with you on the cookie train. They are my faaaaaave. And when I married a man who doesn't really care of chocolate chip cookies, my heart was almost shattered. But then I found ways around it, like white chocolate lemon cookies (be still, my heart) SO GOOD. And he looooved them. So. I guess I'll keep him 😉
