ginger sugar looove cookies

there’s something about all this chilly winter air that just makes me want to bake.
it’s cozy and homey and i like that.
nowww i have another baking excuse: valentines day is coming!
love+hearts+cookies=happy brittany.
so, i tried out a cute little cookie recipe last night that i had neverever tasted or heard of…

i now present… heart-shaped ginger sugar cookies!


i got the recipe from martha stewart [umyes, martha’s a very close friend of mine. in my head].
i wasn’t positive that i was gonna love the teeny bit of zingy ginger flare… oh, but i do!

here’s martha’s recipe:

ingredients

  • 3/4 cup all-purpose flour, plus more for surface
  • 1/4 teaspoon baking soda
  • pinch of salt
  • 2 ounces (4 tablespoons) unsalted butter, softened
  • 6 tablespoons granulated sugar
  • 2 tablespoons light-brown sugar
  • 1 1/2 teaspoons finely grated ginger
  • 1 large egg yolk
  • sanding sugar, for sprinkling

directions

  1. sift flour, baking soda, and salt into a medium bowl
  2. cream butter and sugars with a mixer until pale and fluffy
  3. beat in ginger, then yolk
  4. reduce speed to low, and add flour mixture gradually, beating until just combined
  5. wrap in plastic, and refrigerate for 1 hour (or up to 2 days)
  6. preheat oven to 350 degrees
  7. turn out dough onto lightly floured parchment
  8. roll out until 1/4 inch thick, and cut out cookies using a 1 3/4-inch heart-shaped cutter
  9. transfer to parchment-lined baking sheets
  10. brush each cookie with a damp pastry brush, then sprinkle with sanding sugar
  11. refrigerate for 15 minutes
  12. bake until cookies are set and light gold around edges, 10 to 12 minutes
i added maybe 2 extra little spoonfuls of sugar and a little lemon juice to the mix. i know, right, how dare i tamper with martha’s perfection? well, i did.

i also didn’t have sanding sugar, so i just used little sprinkles of regular sugar on top.. maybe they weren’t as sparkly pretty as they could’ve been, but they were just as good!

thennn i only baked them for 8 minutes because i wanted to make sure they would be super soft. i was maybe a teensy bit surprised that they turned out as yummydelish as they did… but, really, why should i ever doubt martha?
