eggless lemon sugar cookies

i super love cookies. like, when this girl wants cookies… watch out! so i went to bake up some cookies the other day and found that i didn’t have any eggs. no good. but then i figured… there are vegans out there and they can do things without eggs. i need eggless cookies! so i ended up with an eggless recipe based on like a jillion other eggless recipes. still, i was worried that these cooks would turn out to be too crispy… but they came out perfectly soft and not at all dry or crumbly. yaaay! i even took them out in public and people ate them. and then i even made a second batch. eggless victory!

so if you’re out of eggs… or you’re an anti-crispy cookie vegan… or you just want to eat all the yummy dough without risking salmonella… you’re in luck. i am your eggless cookie fairy godmother! yum!


ingredients

  • 1 cup [or 2 sticks] butter, softened
  • 2 cups sugar or 1 1/2 cup sugar & 1/3 cup brown sugar
  • 2 tsp baking powder
  • 1/2-ish cup water [i start with half and add some if it’s too dry]
  • 2 tsp vanilla extract
  • about 1/2 tsp lemon extract [or maybe 1 tsp-ish lemon juice, the extract has more flavor]
  • 3 cups flour [update: i have since made these cookies a few more times & ended up adding another 1/2 cup flour!]
  • optional: confectioners sugar

directions

  1. preheat oven to 400 & grease cookie sheet
  2. combine butter & sugar, mix until smooth
  3. add in baking powder, water, vanilla & lemon. stir.
  4. add in flour a little at a time. mixy mix.
  5. nibble on some of the dough… taste-testing, of course
  6. drop heaping teaspoonfuls onto cookie sheet & bake 7-10 minutes
  7. sprinkle with confectioners sugar 🙂

    Oh how genius Brittany! What a way to use your resources! I'm like you…when I get a craving for cookies, no stopping me. Choc chip are what I fancy but these sound delicious, may have to try!

    I was craving something lemon for dessert and yup… Totally forgot to buy eggs!! So I really didn't expect to find anything worth trying buy I saw this and I am soooooo glad I tried it! I used a table spoon of batter so they were nice and big. Then I made an icing out of 2 tbsp of melted butter, a splash of lemon extract and added powdered sugar until it was the right consistency. I spread a thin layer on the bottom of a cookie and sandwiched them together, then sprinkled lightly with powdered sugar or looks. Sooo yummy- think I will try them sandwiched with vanilla ice cream too : )
